In Singapore, most people consume too much salt. The problem is, you can’t see it. Hidden in everyday hawker dishes, salt is often mistaken for flavour. So instead of telling people to cut back, we made it visible. Working with artist John Knuth, we used flies as natural sodium detectors. When exposed to local dishes, they gravitated towards areas with higher salt content. What they left behind formed intricate, pointillist images that mapped where the salt was hiding. Each piece turned familiar meals into striking visual compositions. Beautiful at first glance, but unsettling once understood. The works were displayed at Orchard MRT, where thousands pass through daily, often on their way to eat. By turning invisible data into images, The Gallery of Hidden Salt changed how Singaporeans saw the food they love.
